  • 6 ounces (170 grams) Gruyère cheese, shredded
  • 4 ounces (115 grams) Swiss cheese, shredded
  • 1 cup (240 ml) dry white wine (e.g., Sauvignon Blanc or Pinot Grigio)
  • 1 garlic clove, halved
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon cornstarch
  • 1 tablespoon kirsch (cherry brandy) – optional
  • Pinch of freshly ground black pepper
  • Pinch of nutmeg
  • Baguette or bread cubes for dipping
  • Optional dippers: steamed veggies (broccoli, baby potatoes), sliced apples, cured meats

Instructions

  1. Shred 6 ounces of Gruyère and 4 ounces of Swiss cheese and set aside.
  2. Rub the inside of a fondue pot or heavy-bottomed saucepan with the cut sides of one garlic clove.
  3. Pour 1 cup of dry white wine into the pot and warm gently over medium-low heat until steam rises, about 3-4 minutes. Do not boil.
  4. In a small bowl, mix 1 tablespoon cornstarch with 1 tablespoon fresh lemon juice to create a slurry.
  5. Slowly add shredded cheese to the warm wine, stirring constantly in a figure-eight motion until fully melted and smooth, about 5-7 minutes.
  6. Stir in the cornstarch-lemon slurry and continue stirring until the fondue thickens and coats the back of a spoon.
  7. If using, add 1 tablespoon kirsch and stir to combine.
  8. Season with a pinch of freshly ground black pepper and nutmeg, adjusting to taste.
  9. Transfer the fondue pot to the table over low heat or keep warm on the stove.
  10. Serve with bread cubes, steamed veggies, fruit slices, or cured meats for dipping.

Notes

Do not boil the cheese mixture to avoid separation. Stir constantly over low heat. If fondue becomes too thick or starts to separate, add a splash of warm wine to restore creamy texture. Rubbing the pot with garlic adds subtle aroma without overpowering. Freshly shredded cheese melts better than pre-shredded.
