  • 1/2 cup (120ml) Vegetable Oil
  • 2 large Eggs, room temperature
  • 3/4 cup (150g) Granulated White Sugar
  • 2 teaspoons Pumpkin Pie Spice
  • 1/4 cup (50g) Granulated Sugar (for topping)
  • 1 tablespoon Ground Cinnamon (for topping)
  • 2 tablespoons Unsalted Butter, melted (for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease thoroughly.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin pie spice until no lumps remain.
  3. In a large bowl, combine pumpkin puree, buttermilk, oil, eggs, and sugar. Whisk vigorously until smooth and uniform.
  4. Gently fold the dry ingredients into the wet ingredients using a spatula. Stop as soon as the flour disappears; do not overmix.
  5. Divide the batter evenly among the 12 muffin cups, filling each about 2/3 full.
  6. In a small bowl, mix the melted butter with the topping sugar and cinnamon to create a wet, sandy texture.
  7. Spoon a generous teaspoon of the topping mixture onto the center of each muffin and gently press it into the batter.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs.
  9. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Ensure eggs and buttermilk are at room temperature for better emulsification. Measure flour by spooning it into the cup and leveling it off to avoid dry muffins. Do not overmix the batter to keep muffins tender. The topping should be pressed into the batter before baking to create a caramelized crust.
