A forgiving, flexible charcuterie board for two that focuses on flavor and texture over perfection. Perfect for a date night, this board comes together in under 15 minutes with simple ingredients and zero stress.

Ingredients

Scale
  • 4 oz aged cheddar, sliced
  • 4 oz brie, at room temperature
  • 4 oz goat cheese log
  • 4 oz prosciutto, thinly sliced
  • 4 oz salami, sliced (Genoa recommended)
  • 1 cup red grapes, washed and dried
  • 1 small apple, thinly sliced (Granny Smith or Honeycrisp)
  • 1/2 cup dried apricots
  • 1 cup mixed nuts (almonds, walnuts, or cashews, roasted and salted)
  • 1/2 cup Marcona almonds (optional)
  • 1 small baguette, sliced and lightly toasted
  • 1 cup assorted crackers (Raincoast Crisps or water crackers)
  • 3 tbsp honey
  • 2 tbsp fig jam or apricot preserves
  • 1 tbsp whole-grain mustard
  • 1/3 cup cornichons
  • 1/3 cup mixed olives (kalamata and Castelvetrano)
  • Fresh rosemary sprigs (optional garnish)
  • Edible flowers (optional garnish)
  • Flaky sea salt (optional garnish)

Instructions

  1. Take cheeses out of fridge 20 minutes before starting. Slice cheddar into thin triangles, leave brie whole (score top), slice goat cheese into 1/2-inch rounds.
  2. Wash and dry grapes thoroughly. Slice apple just before serving; toss in lemon juice if prepping ahead.
  3. Slice baguette on diagonal, brush with olive oil, toast at 375°F for 5-7 minutes until golden. Cool completely.
  4. Place small bowls on board first (honey in center, olives on one side, jam on other). Add cheese in three different spots.
  5. Fold prosciutto into loose ribbons; arrange salami slices in slight overlap. Place meats near complementary cheeses.
  6. Scatter grapes, apple slices, and dried apricots in empty spaces. Add nuts and cornichons. Place crackers and baguette slices around edges, fanning out.
  7. Drizzle honey over brie and goat cheese. Sprinkle flaky sea salt over cheddar. Add rosemary sprigs for color.

Notes

Let cheese sit at room temperature for 20-30 minutes before serving for best flavor. If board looks sparse, add more crackers or nuts. If cheese sweats, refrigerate board for 5 minutes. For dairy-free, use cashew-based soft cheese and vegan alternatives. For gluten-free, use GF crackers or cucumber rounds.
