This brown butter apple crisp with oat crumble is the ultimate fall dessert—warm, spiced apples topped with a crunchy oat topping made with nutty brown butter. Quick and easy, it’s perfect for Thanksgiving or a cozy weeknight treat.

Ingredients

Scale
  • 6 medium apples, peeled, cored, and sliced (about 6 cups; mix of Granny Smith and Honeycrisp recommended)
  • 1/3 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (freshly grated preferred)
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter
  • 3/4 cup old-fashioned rolled oats (not quick oats)
  • 1/2 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×9-inch baking dish with butter or cooking spray.
  2. Place a large skillet or Dutch oven over medium heat and add 1/2 cup unsalted butter. Let it melt completely, then swirl occasionally. After 3-4 minutes, the butter will foam. Continue cooking until the milk solids turn amber and the butter smells nutty (about 5-7 minutes total). Remove from heat immediately.
  3. In a medium bowl, combine rolled oats, 1/2 cup flour, brown sugar, salt, and 1/2 teaspoon cinnamon. Pour the warm brown butter over the dry ingredients and stir with a fork until moistened and clumpy. Set aside.
  4. In the same skillet (don’t wipe it out), add the sliced apples. Sprinkle with granulated sugar, 2 tablespoons flour, 1 teaspoon cinnamon, nutmeg, lemon juice, and vanilla. Toss to coat. Cook over medium heat for about 5 minutes, stirring occasionally, until apples release juices and sugar dissolves.
  5. Pour the apple mixture into the prepared baking dish and spread into an even layer.
  6. Take handfuls of the oat mixture, squeeze gently to form clumps, and drop evenly over the apples. Do not press down.
  7. Place the dish on a baking sheet and bake for 35-40 minutes, until topping is golden brown and apple juices bubble around the edges. If topping browns too quickly, tent loosely with foil for the last 10 minutes.
  8. Let cool on a wire rack for at least 15 minutes before serving.

Notes

For gluten-free: use 1:1 gluten-free flour blend and certified gluten-free oats. For vegan: use high-quality vegan butter (browning may be less dramatic). Let crisp rest 15 minutes after baking to set filling. Double the crumble and freeze half for future use. If topping browns too quickly, tent with foil.
