A comforting dessert featuring bourbon-infused peach filling topped with fluffy buttermilk biscuits, perfect for cozy evenings or seasonal gatherings.

Ingredients

Scale
  • 5 cups fresh peaches, peeled and sliced (about 67 medium peaches; frozen peaches can be used if out of season)
  • 1/4 cup bourbon (smooth brand like Maker’s Mark or Buffalo Trace recommended)
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon freshly grated nutmeg (optional)
  • Pinch of salt
  • 2 cups all-purpose flour (King Arthur Flour recommended)
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 6 tablespoons cold unsalted butter, cubed (high-quality butter like Kerrygold recommended)
  • 1 cup cold buttermilk (or 1 cup milk + 1 tablespoon lemon juice, let sit 5 minutes)

Instructions

  1. Preheat your oven to 375°F (190°C). Position a rack in the middle of the oven.
  2. In a medium bowl, combine sliced peaches with granulated sugar, brown sugar, cornstarch, cinnamon, nutmeg, salt, vanilla extract, and bourbon. Toss gently to coat. Let sit for 10-15 minutes to thicken.
  3. Transfer the peach mixture to a 9×13-inch baking dish and spread evenly.
  4. In a large bowl, whisk together flour, baking powder, baking soda, sugar, and salt.
  5. Add cold cubed butter and cut into the flour mixture using a pastry cutter or fingertips until coarse crumbs with pea-sized butter bits remain.
  6. Pour in cold buttermilk and gently stir just until dough comes together; do not overmix.
  7. Drop spoonfuls of biscuit dough evenly over the peach filling; biscuits do not need to cover all the filling.
  8. Bake for 35-40 minutes until biscuit topping is golden brown and peach filling bubbles at edges. Tent with foil if biscuits brown too quickly.
  9. Let cobbler cool on a cooling rack for about 15 minutes before serving to allow filling to thicken.

Notes

Use cold butter for flaky biscuits and avoid overmixing the dough to keep biscuits tender. Let peach filling macerate to release juices and thicken. If biscuits brown too fast, tent with foil. Rest cobbler before serving to thicken filling. For a personal touch, brush biscuits with melted butter after baking.
