Ingredients

Scale
  • 1 ยฝ cups all-purpose flour (spooned and leveled)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ยฝ teaspoon salt
  • 2 teaspoons ground cinnamon
  • ยฝ teaspoon ground nutmeg (freshly grated is best, but pre-ground works)
  • ยผ teaspoon ground cloves
  • ยฝ cup granulated sugar
  • ยฝ cup packed light brown sugar
  • ยฝ cup unsalted butter, melted and slightly cooled
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • ยพ cup apple cider
  • 1 tablespoon apple cider vinegar
  • ยฝ cup granulated sugar (for coating)
  • 1 ยฝ tablespoons ground cinnamon (for coating)
  • ยผ cup unsalted butter, melted (for brushing)

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Lightly grease your donut pan with non-stick spray or a little melted butter.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves. Set aside.
  3. In a large bowl, whisk together the granulated sugar, brown sugar, and melted butter until smooth. Add the egg and vanilla and whisk until combined and glossy.
  4. Pour in the apple cider and the apple cider vinegar. Whisk until the batter is smooth. It will look a little thin, but that’s exactly right.
  5. Pour the dry ingredients into the wet ingredients. Use a rubber spatula to fold everything together gently. Mix just until you no longer see streaks of flour. A few small lumps are fine.
  6. Transfer the batter to a piping bag or a sturdy ziploc bag with the corner snipped off. Pipe the batter into the prepared donut pan, filling each cavity about โ…” to ยพ full.
  7. Bake for 10 to 12 minutes, or until the donuts are golden brown and a toothpick inserted into the thickest part comes out clean. The tops should spring back when lightly touched.
  8. Let the donuts cool in the pan for exactly 2 minutes.
  9. While the donuts are cooling, mix the granulated sugar and cinnamon together in a shallow bowl. Melt the ยผ cup of butter in a separate small bowl.
  10. After the 2 minutes are up, turn the donuts out onto a cooling rack. While they are still warm, use a pastry brush to lightly coat each donut with melted butter. Then, immediately dip the buttered donut into the cinnamon sugar mixture, turning to coat all sides.
  11. Serve immediately. Repeat with the remaining batter if you have a second pan, or let the pan cool completely before greasing and refilling.

Notes

The apple cider vinegar is the secret ingredient that makes these donuts incredibly tender. Don’t skip it! For best results, use room temperature egg and don’t overmix the batter. Let donuts cool in pan for exactly 2 minutes before removing. Store in an airtight container at room temperature for up to 2 days. Reheat in microwave for 10 seconds or in a 300ยฐF oven for 5 minutes.
