  • 1 bottle (750 ml) chilled Brut Champagne, Prosecco, or Cava
  • Ice (optional)

Instructions

  1. Make the Concentrated Cider Syrup: In a small saucepan, combine 2 cups apple cider, 2 cinnamon sticks, 3 whole cloves, and star anise (if using). Bring to a gentle boil over medium-high heat.
  2. Reduce the Cider: Reduce heat to medium-low and simmer for 20-25 minutes, stirring occasionally, until the cider reduces to about 1/2 cup and becomes syrupy.
  3. Strain and Cool: Remove from heat. Pour through a fine-mesh strainer into a small bowl or heat-safe measuring cup. Discard spices. Let cool completely to room temperature (refrigerate to speed up).
  4. Prepare the Cinnamon Sugar Rim: On a small saucer, mix 2 tablespoons granulated sugar with 1 tablespoon ground cinnamon. Run an orange slice around the rim of each champagne flute or wine glass to dampen it.
  5. Coat the Rims: Holding each glass upside down, gently twist the damp rim in the cinnamon-sugar mixture until evenly coated. Tap gently to remove excess sugar.
  6. Assemble the Mimosa: For each serving, pour 2 tablespoons (1 ounce) of cooled cider syrup into the bottom of a prepared glass. Add ice if desired.
  7. Top with Bubbles: Slowly pour chilled Brut champagne or prosecco into the glass, filling to the top. Pour gently to avoid disturbing the rim.
  8. Garnish and Serve: Give a gentle stir. Garnish with a thin apple slice or a fresh cinnamon stick. Serve immediately.

Notes

The cider syrup can be made up to 1 week ahead and stored in the refrigerator. For a non-alcoholic version, substitute champagne with sparkling apple cider or ginger ale. Use a dry Brut sparkling wine to balance the sweetness of the syrup. Rim glasses before adding any liquid to prevent the sugar from sliding off.
