  • 1/4 teaspoon pumpkin pie spice
  • 1 pinch cinnamon, plus more for garnish
  • Ice cubes (enough to fill a tall glass)

Instructions

  1. Make the pumpkin cream: In a small bowl, combine 2 tablespoons heavy cream, 2 tablespoons milk, 1 tablespoon pumpkin puree, 1 tablespoon maple syrup, 1/2 teaspoon vanilla extract, 1/4 teaspoon pumpkin pie spice, and a pinch of cinnamon. Whisk vigorously until the pumpkin puree is completely incorporated and the mixture is smooth (about 30 seconds).
  2. Fill your glass with ice: Add ice cubes to a tall glass (about 6-8 large cubes).
  3. Pour the cold brew: Pour 1 cup of chilled cold brew coffee over the ice, leaving about an inch of space at the top for the cream layer.
  4. Layer the pumpkin cream: Slowly pour the pumpkin cream mixture over the back of a spoon held just above the cold brew to help the cream float on top.
  5. Garnish and serve: Sprinkle a tiny pinch of cinnamon or pumpkin pie spice on top. Serve immediately with a straw or spoon. Stir gently if desired.
