  • 1/2 cup (120g) pure pumpkin puree
  • 2 large eggs, room temperature
  • 1 extra egg yolk
  • 2 tsp vanilla extract
  • 2 1/4 cups (280g) all-purpose flour
  • 1 1/2 tsp pumpkin pie spice
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups (250g) semi-sweet chocolate chips

Instructions

  1. Brown the butter in a saucepan over medium heat, stirring constantly until golden brown and nutty (5-7 minutes). Pour into a heatproof bowl and let cool slightly.
  2. In a large bowl, combine the cooled browned butter, brown sugar, and granulated sugar. Beat on medium-high speed for about 3 minutes until light and fluffy.
  3. Mix in the pumpkin puree, eggs, extra egg yolk, and vanilla extract. Beat until just combined.
  4. In a separate bowl, whisk together the flour, pumpkin pie spice, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Do not overmix.
  6. Gently fold in the chocolate chips with a spatula.
  7. Scoop dough into 2-tablespoon balls and place on a parchment-lined baking sheet. Chill in the fridge for 30 minutes.
  8. Preheat oven to 350°F (175°C). Bake cookies for 10-12 minutes until edges are set but centers are still soft.
  9. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Do not use pumpkin pie filling; use 100% pure pumpkin puree. Chilling the dough is crucial to prevent spreading. Ensure eggs are at room temperature. For gluten-free, use a 1:1 gluten-free flour blend with xanthan gum. Store in an airtight container with a slice of bread to maintain softness.
