Brown Butter Maple Pecan Blondies

Rich, fudgy blondies with browned butter, maple syrup, and crunchy pecans. An easy one-bowl recipe that’s perfect for fall and holidays.

  • ½ cup (113g) unsalted butter
  • 1 cup (200g) packed light brown sugar
  • ¼ cup (60ml) pure maple syrup
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (125g) all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup (85g) chopped pecans
  • ½ cup (90g) white chocolate chips (optional)
  • Flaky sea salt, for sprinkling (optional)
  • ½ teaspoon cinnamon (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving overhang on two sides.
  2. Brown the butter: Place ½ cup unsalted butter in a light-colored saucepan over medium heat. Stir occasionally until it foams and turns amber with golden-brown specks, about 4-5 minutes. Remove from heat immediately and pour into a large mixing bowl to stop cooking.
  3. Let brown butter cool for 5 minutes. Add brown sugar and maple syrup; whisk until smooth and glossy. Add egg and vanilla; whisk until lighter in color, about 1 minute.
  4. In a small bowl, whisk together flour, baking powder, and salt (and cinnamon if using). Gradually fold dry ingredients into wet mixture until just combined. Do not overmix.
  5. Fold in chopped pecans (and white chocolate chips if using). Reserve a handful for topping.
  6. Scrape batter into prepared pan and spread evenly. Sprinkle reserved pecans on top, pressing gently.
  7. Bake for 22-26 minutes, until edges are golden and center looks slightly underdone. A toothpick inserted should come out with moist crumbs, not clean.
  8. Cool in pan on a rack for 30 minutes, then lift out using parchment and cool completely (about 1 hour) before cutting into 9 or 16 squares.

Notes

For best results, use real maple syrup (Grade A dark amber) and toast pecans before adding. Do not overbake; the center should look slightly underdone. Blondies can be stored at room temperature for up to 4 days or frozen for up to 3 months.
