These champagne jello shots are made with just 3 ingredients and set perfectly with tiny bubbles suspended inside. They’re elegant, easy to make, and perfect for New Year’s Eve parties.

Ingredients

Scale
  • 1 ½ cups champagne or sparkling wine (chilled)
  • 2 tablespoons unflavored gelatin powder
  • ¼ cup granulated sugar
  • Optional: edible glitter or gold leaf
  • Optional: fresh raspberries or pomegranate seeds

Instructions

  1. Bloom the gelatin: Pour ½ cup of the chilled champagne into a small bowl. Sprinkle the gelatin powder evenly over the surface. Let it sit for 5-10 minutes without stirring until it becomes a thick, spongy mass.
  2. Heat the mixture: Pour the remaining 1 cup of champagne and the sugar into a small saucepan. Heat over medium-low heat, stirring occasionally, until the sugar dissolves completely (about 2-3 minutes). Do not let it boil.
  3. Combine the mixtures: Remove the saucepan from heat. Add the bloomed gelatin mixture and whisk gently until fully dissolved. The liquid should be clear and smooth.
  4. Cool slightly: Let the mixture sit at room temperature for about 5-7 minutes until warm but not hot to the touch.
  5. Add optional sparkle: If using edible glitter or fruit, stir the glitter into the liquid now, or place a single pomegranate seed or raspberry into each cup before pouring.
  6. Pour into cups: Arrange shot cups on a baking sheet. Using a pitcher or measuring cup with a spout, carefully pour the liquid into each cup, filling them about ¾ full.
  7. Chill until set: Transfer the baking sheet to the refrigerator and chill for at least 4 hours, or overnight, until firm to the touch and jiggly when shaken.
  8. Serve cold: Right before serving, pop the lids on the cups or arrange them on a platter. Garnish with extra glitter, a mint leaf, or a twist of lemon peel if desired. Serve immediately, straight from the fridge.

Notes

Don’t use flat champagne; fresh bubbles give a lighter texture. Temperature matters: let champagne sit at room temperature for 10 minutes before starting. Whisk gently to incorporate air. Make a day ahead for best flavor. If shots don’t set, reheat with extra gelatin and re-pour.
