Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan and line with parchment paper.
  2. In a large bowl, whisk together 2 cups flour, baking powder, baking soda, salt, 1 tsp cinnamon, and nutmeg. Set aside.
  3. In a separate large bowl, beat softened butter and granulated sugar until light and fluffy (3-4 minutes).
  4. Beat in vegetable oil, eggs, and vanilla extract until just combined. Scrape down sides of the bowl.
  5. Gradually add dry ingredients to wet ingredients on low speed. Stop once flour disappears. Fold in pumpkin puree gently until batter is thick and smooth.
  6. In a small bowl, combine 1 cup flour, brown sugar, 1 tsp cinnamon, and pecans. Cut in cold butter using a pastry cutter or fingers until mixture resembles coarse crumbs.
  7. Pour batter into prepared pan and spread evenly. Sprinkle streusel topping generously over the batter.
  8. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Cover with foil if top browns too quickly.
  9. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
