A creamy, savory gluten-free green bean casserole with homemade sauce and crispy onions that will impress everyone at your holiday table, even those without dietary restrictions.

Ingredients

Scale
  • 1 ยฝ pounds fresh green beans, trimmed and cut into 2-inch pieces (frozen works too, just thaw and pat dry)
  • 2 tablespoons unsalted butter (I prefer Kerrygold for its rich flavor)
  • 8 ounces cremini mushrooms, sliced (white button mushrooms work fine too)
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • ยผ cup gluten-free all-purpose flour blend (I recommend King Arthur Measure for Measure or Bob’s Red Mill 1-to-1)
  • 1 ยฝ cups chicken or vegetable broth (low-sodium preferred)
  • 1 cup heavy cream (adds richness; use full-fat coconut milk for dairy-free)
  • 1 teaspoon dried thyme
  • ยฝ teaspoon smoked paprika
  • Salt and black pepper to taste
  • ยผ teaspoon nutmeg (trust me on this oneโ€”it makes the sauce sing)
  • 1 large yellow onion, thinly sliced into rings
  • ยฝ cup gluten-free all-purpose flour blend
  • ยฝ teaspoon salt
  • ยผ teaspoon black pepper
  • ยผ teaspoon garlic powder
  • 1 cup buttermilk (or 1 cup milk mixed with 1 tablespoon lemon juice, let sit 5 minutes)
  • Vegetable oil for frying (about 2 cups)

Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC).
  2. Blanch the green beans: Bring a large pot of salted water to a boil. Add the green beans and cook for 3-4 minutes until they’re bright green and just tender-crisp. Drain immediately and plunge into a bowl of ice water to stop the cooking. Drain again and set aside.
  3. Make the crispy onions: While the beans are cooling, heat about 2 inches of vegetable oil in a small saucepan to 350ยฐF (175ยฐC). In a medium bowl, whisk together the gluten-free flour, salt, pepper, and garlic powder. Pour the buttermilk into another bowl. Dip the onion rings in the buttermilk, then coat them in the flour mixture. Fry in batches for 2-3 minutes until golden brown. Drain on paper towels and sprinkle with a little salt while still warm.
  4. Sautรฉ the aromatics: In a large skillet, melt the butter over medium heat. Add the diced onion and cook for 4-5 minutes until translucent. Add the sliced mushrooms and cook for another 5-6 minutes until they release their liquid and start to brown. Add the minced garlic and cook for 30 seconds until fragrant.
  5. Make the cream sauce: Sprinkle the gluten-free flour over the mushroom mixture and stir constantly for 1-2 minutes to cook out the raw flour taste. Slowly pour in the chicken broth while whisking continuously to prevent lumps. Add the heavy cream, thyme, smoked paprika, nutmeg, salt, and pepper. Bring to a simmer and cook for 3-4 minutes until the sauce thickens enough to coat the back of a spoon.
  6. Combine everything: Add the blanched green beans to the skillet with the sauce. Stir gently until everything is well coated. Transfer the mixture to your 9×13-inch baking dish and spread it evenly.
  7. Bake and top: Bake the casserole uncovered for 20 minutes. Remove from the oven, top with the crispy fried onions, and bake for another 5-10 minutes until the onions are golden and the casserole is bubbly around the edges.
  8. Rest before serving: Let the casserole sit for 5 minutes before serving.

Notes

Don’t skip blanching the green beansโ€”it prevents a watery casserole. Use a 1-to-1 gluten-free flour blend with xanthan gum for best results. Watch oil temperature carefully when frying onions to avoid greasiness. The sauce can be made up to 2 days ahead and reheated. For dairy-free, use vegan butter, full-fat coconut milk, and almond milk with lemon juice. For a protein boost, add cooked bacon or pancetta. To make ahead, assemble without onions, refrigerate up to 24 hours, then add 10 minutes to baking time.
