  • 2 large russet potatoes, scrubbed and cut into 1/2-inch thick fries
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • 1 1/2 cups sharp cheddar cheese, freshly grated
  • 1/4 cup pickled jalapeño juice
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 cup cooked and seasoned ground beef
  • 1/4 cup pickled jalapeños, sliced
  • 1/4 cup pico de gallo or diced fresh tomatoes
  • 1/4 cup sour cream
  • 1/4 cup fresh cilantro, chopped
  • 1/2 avocado, diced

Instructions

  1. Preheat oven to 425°F (220°C). Cut potatoes into 1/2-inch thick fries.
  2. Soak cut fries in a large bowl of cold water for 15 minutes. Drain and pat very dry.
  3. In a dry bowl, toss dried fries with olive oil, salt, pepper, garlic powder, and smoked paprika until evenly coated.
  4. Spread fries in a single layer on a prepared baking sheet. Bake for 15 minutes, flip, and bake another 10-15 minutes until golden and crispy.
  5. While fries bake, melt butter in a medium saucepan over medium heat. Whisk in flour and cook for 1 minute.
  6. Slowly pour in milk, whisking constantly, until mixture thickens (2-3 minutes). Reduce heat to low.
  7. Add grated cheddar cheese by the handful, stirring until melted before adding more. Stir in pickle juice and cayenne. Keep warm.
  8. Arrange hot fries on a serving platter. Drizzle cheese sauce generously over the top.
  9. Sprinkle seasoned ground beef, jalapeños, pico de gallo, and diced avocado over everything.
  10. Dollop sour cream on top and finish with fresh cilantro. Serve immediately.

Notes

For extra crispy fries, do not skip the soaking step. Grate your own cheese for a smooth sauce. Serve immediately to prevent sogginess. Leftover fries and sauce should be stored separately.
