A fun and spooky Halloween guacamole dip shaped like Frankenstein’s monster, featuring black bean bolts and a carved face. Quick to make and a guaranteed crowd-pleaser.

Ingredients

Scale
  • 4 ripe avocados, halved and pitted
  • 1 medium lime, juiced (about 2 tablespoons)
  • 1/4 cup finely chopped red onion
  • 1 small jalapeño, seeded and minced (optional)
  • 1/4 cup fresh cilantro, chopped
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 1 medium Roma tomato, seeded and diced
  • 1/2 cup black beans, drained, rinsed, and patted very dry
  • 2 slices of black olive, cut into small rounds
  • 1 small piece of red bell pepper, cut into a tiny mouth shape
  • 1 tablespoon sour cream (optional, for scars or stitches)

Instructions

  1. Prep the avocados: Cut each avocado in half lengthwise around the pit. Twist to separate. Remove the pit by gently tapping it with your knife and twisting it out. Score the flesh in a grid pattern inside the skin, then scoop it out with a spoon into your mixing bowl.
  2. Mash the avocados: Use a potato masher or fork to mash the avocado to your desired consistency (about 70% mashed, 30% small chunks).
  3. Add the lime juice: Squeeze the lime directly over the mashed avocado and stir immediately.
  4. Mix in the aromatics: Add the chopped red onion, minced jalapeño (if using), chopped cilantro, diced tomato, salt, and pepper. Fold together gently. Taste and adjust seasoning.
  5. Shape the face: Transfer the guacamole to a serving platter. Use a spoon to spread it into an oval or round shape, about 1 inch thick. Use the back of the spoon to create a smooth surface.
  6. Carve the monster expression: Using a paring knife, gently carve two eye sockets (small circles) and a mouth (a jagged line or a frown) into the surface of the guacamole, about 1/4 inch deep.
  7. Add the eyes: Place the black olive slices into the eye sockets. Press them gently so they sit flush with the guacamole.
  8. Create the mouth: Place the red bell pepper piece into the mouth carving.
  9. Add the bolts: Take the drained and dried black beans and arrange them on the sides of the head, near the temples. Use two or three beans per side, lined up vertically. Press them in gently.
  10. Finish with scars: If using sour cream, put it in a small zip-top bag, snip off a tiny corner, and pipe thin lines across the forehead or cheeks for stitched scars.
  11. Serve immediately: Surround the face with tortilla chips, carrot sticks, or cucumber rounds for dipping.

Notes

Pat black beans very dry to prevent bleeding into guacamole. Assemble face no more than 30 minutes before serving. For best results, use ripe Hass avocados. Prep guacamole base up to 2 hours ahead; press plastic wrap directly onto surface to prevent browning.
