Ingredients

  • Babybel cheese or similar mini cheese wheels (4 to 6 pieces)
  • Green olives, pitted (about 1 cup)
  • Black olives, pitted (about 1 cup)
  • Dill pickle spears or cornichons (about 1 cup)
  • Grapes, red or green (about 1 cup)
  • Cherry tomatoes (about 1 cup)
  • Almonds, roasted and salted (about 1 cup)
  • Cashews, roasted and salted (about 1 cup)
  • Crackers, assorted (about 8 ounces)
  • Baguette, sliced into thin rounds (optional)
  • Honey (for drizzling, optional)
  • Fresh rosemary or thyme sprigs (for garnish)

Instructions

  1. Prepare your board: Start with a clean, dry football-shaped board. If using a rectangular board, mentally map out a football shape in the center. Place small bowls or ramekins at the two pointed ends of the football shape to hold olives, nuts, or honey.
  2. Place the cheese first: Arrange larger cheese items in the middle of the board. Place the block of sharp cheddar in the center, cut into cubes or thin slices. Arrange gouda wedges on one side of the cheddar. Place Babybel cheeses around the edges, spacing them evenly.
  3. Add the meats: Fold each slice of salami in half, then in half again to create a small triangle. Arrange folded salami slices in a line down the center of the board, overlapping slightly. Do the same with pepperoni slices, placing them in a separate cluster to form a spine down the middle of the football shape.
  4. Fill in with crackers: Place crackers in small clusters around the cheeses and meats. Create little cracker groupings of three or four, fanning them out slightly. Position some crackers near the edges of the board to create a border effect.
  5. Add the pickles and olives: Place dill pickle spears or cornichons in one small bowl at a pointed end of the football. Fill the other small bowl with mixed olives. If not using bowls, pile them directly on the board.
  6. Scatter the fruits and nuts: Sprinkle grapes and cherry tomatoes in gaps between larger items. Add almonds and cashews in little piles, filling any empty spaces.
  7. Add optional baguette slices: If using baguette, arrange slices in a single layer along the outer edge of the board to create a frame for the football shape.
  8. Drizzle and garnish: If using honey, place a small dish of it near the gouda. Tuck small sprigs of fresh rosemary or thyme between cheese and meat clusters for a professional look.
  9. Final check: Step back and look at the board. Fill any obvious gaps with extra nuts or crackers. The board should look full but not overcrowded.

Take cheese out of refrigerator about 30 minutes before assembling for better flavor and easier slicing. Fold meats into triangles or roll into cylinders for height and texture.
