Ingredients

Scale
  • 2 medium delicata squash
  • 2 tablespoons olive oil
  • 1 teaspoon salt (fine sea salt)
  • ½ teaspoon black pepper (freshly ground)
  • ½ cup all-purpose flour
  • 2 large eggs (room temperature)
  • 1 cup panko breadcrumbs
  • ½ cup grated parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ¼ teaspoon cayenne pepper (optional)
  • Fresh parsley (chopped, for garnish)
  • Flaky sea salt (for garnish)
  • Lemon wedges (for serving)
  • Ranch dressing or aioli (for dipping, optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and place a wire rack on top if available.
  2. Wash the delicata squash thoroughly. Cut off both ends, then slice into ½-inch thick rings. Scoop out the seeds and stringy bits from the center.
  3. Set up a dredging station: In the first shallow bowl, combine flour with ½ teaspoon salt and ¼ teaspoon pepper. In the second bowl, beat eggs with a splash of water. In the third bowl, mix panko breadcrumbs, grated parmesan, garlic powder, smoked paprika, oregano, cayenne (if using), and remaining salt and pepper.
  4. Toss the squash rings with olive oil, ½ teaspoon salt, and ¼ teaspoon pepper.
  5. Working one at a time, dredge each ring in the flour mixture, shaking off excess. Dip in egg wash, letting excess drip off. Press into the panko mixture until fully coated. Place on prepared baking sheet or wire rack.
  6. Arrange coated rings in a single layer without touching. Bake for 15 minutes, then carefully flip each ring using tongs. Bake for another 10-12 minutes until golden brown and crispy.
  7. Remove from oven and let cool on baking sheet for 2-3 minutes. Transfer to a serving platter, sprinkle with fresh parsley and flaky sea salt, and serve with lemon wedges.

Notes

Don’t skip the flour step—it helps the coating stick. Use a wire rack for extra crispiness. Avoid overcrowding the pan to prevent steaming. For thicker rings, add a few extra minutes of baking time. If coating browns too quickly, tent loosely with foil for the last 5 minutes.
