A quick and easy cinnamon roll casserole that saves Christmas morning chaos. Made with canned cinnamon rolls, heavy cream, and a few pantry staples, this gooey, caramelized breakfast bake is a crowd-pleaser that tastes like a bakery treat.

Ingredients

Scale
  • 2 cans (12.4 oz each) refrigerated cinnamon rolls with icing (e.g., Pillsbury Grands!)
  • 1/2 cup heavy cream
  • 1/4 cup unsalted butter, melted
  • 1/4 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 cup chopped pecans or walnuts (optional)
  • 1/4 cup raisins or dried cranberries (optional)
  • Reserved icing from the cinnamon roll cans

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Open the cinnamon roll cans. Separate each roll and cut them into quarters using a knife or kitchen shears.
  3. Arrange the pieces in the baking dish in a single layer, spreading them out evenly.
  4. In a small bowl, whisk together the heavy cream, melted butter, brown sugar, vanilla extract, and ground cinnamon until the sugar is mostly dissolved.
  5. Pour the cream mixture evenly over the cinnamon roll pieces. Gently toss with a spatula if needed, but do not overmix.
  6. Sprinkle the nuts and raisins (if using) over the top, pressing them lightly into the dough.
  7. Bake uncovered for 25 minutes, until the top is golden brown and the edges are bubbly. If browning too fast, tent loosely with foil for the last 10 minutes.
  8. Let the casserole cool for 5 minutes to set.
  9. Warm the reserved icing packets in a bowl of hot water for 10 seconds, then drizzle over the top.
  10. Serve warm, scooping out portions with a spatula.

Notes

For best results, do not overbake. Let the casserole rest for 5 minutes after baking to allow the cream to absorb. If making ahead, assemble without the cream mixture and refrigerate overnight; pour cream just before baking. Use a metal spatula to serve to prevent sticking.
